Beat together 175g butter/margarine and 175g caster sugar until light and fluffy. Mix in 3 beaten eggs. Stir in 175g self raising flour and (3 dessertspoons instant coffee dissolved in 3 dessertspoons water). Divide the mixture between two tins, bake for 20-25 minutes at 180°C and cool on a wire rack.
For the filling/icing, beat 125g butter until soft and creamy, then mix in 200g icing sugar and (1 dessertspoon instant coffee dissolved in 1 dessertspoon water).
Sandwich the cakes together and ice the top. Decorate with walnuts if you’re feeling traditional 🙂
